Food Network Corned Beef And Cabbage Dinners: St Patrick's Day Irish Recipes



How many people in Ireland will be eating corned beef and cabbage this St. Patrick's Day? My guess is about three or four. Why? Well to be honest corned beef and cabbage isn't that popular of a dish on the Emerald Isle and as Americans are known to do regarding holidays which are not native, they tend to bastardize. Also, there is no green beer in Ireland!

While all the food at Rockfish is delicious, this week I recommend an appetizer that isn't on the menu anymore (but they'll make it if you ask!). Try the Brisket Nachos with your Lagunitas. The strong Belgian ale pairs really well with the smoky flavor of the brisket. The crispy tortilla chips are topped with slow cooked brisket beef, ancho cream sauce, cheese, black beans, fresh jalapeno, and cilantro! And during the half price appetizer time, they're only $4.95! And if you don't like brisket, or don't eat red meat, Rockfish also offers some delicious other appetizers like Volcano Shrimp and Spinach Dip.

I use extra virgin olive oil with a bit of freshly squeezed lemon juice, cracked peppercorns, sea salt and some chopped garlic. I then add whatever fresh herbs I have on hand, my favourite being marjoram. Usually some thyme, parsley and basil.

Delicious with pork chops, etc, on toast or biscuits for breakfast, sprinkled with cinnamon as a snack, or makes a great gift with a pretty ribbon tied around the neck of the jar.
